$parents = $countries->parents()->all();
//To get the first parent of a node
$countries = Menu::findOne(['name' => 'Countries']);
$parent = $countries->parents(1)->one();

Код отлично работает, просто у Countries нет родителей, поэтому вернется пустой результат. Документация будет поправлена в ближайшее время.
