In https://docs.microsoft.com/en-us/ef/core/what-is-new/ef-core-5.0/whatsnew#many-to-many I guess you mean Posts and Tags instead of Posts and Blogs

So this

public class BlogContext : DbContext
{
    public DbSet<Post> Posts { get; set; }
    public DbSet<Blog> Blogs { get; set; }
}

should be this

public class BlogContext : DbContext
{
    public DbSet<Post> Posts { get; set; }
    public DbSet<Tag> Tags{ get; set; }
}

Also in the example SQL that EF will create I hope that EF will use the correct pluralization of table names
