It would be nice to have a docker image and compose setup for running bitcoind instead of btcd as the backend locally.

I completely agree that adding a docker image with bitcoind backend would make sense. I am trying to get LND docker images running for a week now, and LND download of the blockchain just takes so long, that I am still not able to get started. I read that Bitcoind is way faster in this regard.
