[docs]: Update the docs with more accurate release guidelines.

When we release we are currently not using standard-version even though the docs mention it, and we are manually updating the Changelog. As per this issue #380 we have plans to change the changelog generation. But because of our migration away from standard-version it should be noted in the docs step by step how to properly release and publish a new build of Sidecar.
