Should we change the docker-compose.yml tag from :latest to :2 or :2.5 to pin a certain version?

Generally speaking using the
:latesttag is a bad practice, as it can produce unexpected breaking behavior when pulling new images. That said, you usually don't pull new images unless you manually do it.We also don't really have a good way to communicate any possible breaking changes. I guess GitHub Releases is the best place for this?
