automate conda-lock file creation

Conda-lock previously listed absolute paths to the local dir, causing issues when different users generated the files. Conda-lock now allows absolute source paths relative to the lockfile.

As for "automating the lock file creation" there is also this new service that will do it for you! https://prefix.dev/blog/online_environment_solving

But I kind of like keeping the lockfile in the repo and not relying on external hosting...

@lsetiawan was showing me pixi recently and it's looking like a promising successor to conda-lock. Haven't used it extensively yet, but enjoying it so far!
