docs: broken bold styling in inserted markdown

Here's what the index looks like, which contains the contents inserted via the pymdownx-snippets plugin for mkdocs

Possibly due to emojis in the markdown? Would be great if pymdownx/mkdocs handled markdown the same way as github. Problems like this could be solved by CCBR/CCBR_NextflowTemplate#3
