Nitro v2.1.0 was recently released: https://github.com/OffchainLabs/nitro/releases/tag/v2.1.0
This updates the docs to reference that version and its command line argument changes :)
In a future PR, we should consider documenting how to run a node for an existing orbit chain as part of the "Running a full node" page, as opposed to the orbit guide which walks you through deploying a new orbit chain.
