The recommended 23.6.2 -> latest is no longer viable, 23.6.2 at this point is over a year old and getsentry/self-hosted#3257 reports that going to 23.11.0 first was necessary. So I've added that and also streamlined the upgrade docs a bit.
I can't reproduce this on mac arm (can't install 23.6.2, linux/arm64/v8 images are missing for some services), but on mac linux I reproduced.
