Switch to Java 11 using new jpackager dev 3360 bisq-network/bisq#4242 This required extensive reviewing and testing of changes implemented by @cd2357 and also includes implementations and step-by-step guides on my side especially on how to do macOS notarization successfully. This changes fixed lots of UI related bug reports (we also upgraded to JavaFX 15/16) and allows us to use again a LTS Java version from now on. Please see the PR conversations for more details on this nearly one year process 😅

I'm not putting up my team lead efforts up for compensation (~5% of my time) until proven  effective.

I'll focus now on getting the migration to Tor v3 addresses done as it is our most time critical issue (besides the Sword of Damocles on rising mining fees)
